She heated the frying pan until it was just steaming, added butter, and once it melted, quickly poured in the egg mixture. This was a race against time. If she was too quick, the eggs would be undercooked; if she cooked them too long, they would become tough. She had to act quickly and efficiently.

She used a small spatula to incorporate air into the egg mixture while cooking it over high heat. Before folding, she placed the cheese on top, gently tapped the handle, and shook the pan to wrap the cheese in the fluffy eggs.
